This dish is the perfect midweek dinner or the ultimate quick entertainer, so healthy, easy, quick and most importantly delicious!
Serves: 4 Prep time: 5 min Cooking time: 20/30 min
1 packet of our risotto with porcini mushrooms
500 gr button mushrooms
1/2 cup white wine
2 tbs butter
Parmesan to taste
Lemon wedges to serve
-Grill the mushrooms with a little olive oil until caramelised and set aside.
-In a sauce pan heat 1 tbs of butter over high heat.
-Add contents of the packet and fry for 1 minute.
-Turn the heat down and add 1/2 cup of white wine and stir until wine has evaporated.
-Add 1/2 cup of water and continue stirring until evaporated.
-Repeat adding 1/2 cup of water until rice is al dente. Stir in the mushrooms and 1 tbs butter, decorate with the Parmesan cheese and serve immediately with lemon wedges.
