Ingredients:
- 1 packet of our Indian rice pudding
- 500ml cow’s milk
- 1 tin coconut milk
- 400g frozen mango
- 2 tbs butter
- Water to taste
- Mint & toasted coconut chips to decorate if you are feeling fancy!
For a vegan option, substitute the butter with margarine and use another tin of coconut milk in place of the cow’s milk.
Method:
1. Heat 2 tablespoons of butter over medium-high heat in a saucepan.
2. Add the contents of the packet, followed by the cow’s milk and coconut milk.
3. Simmer uncovered over medium-high heat for approximately 30 minutes, stirring occasionally, or until the rice is cooked to your desired consistency and the sauce is creamy.
4. Allow it to cool slightly, then add the frozen mango and water to reach your desired consistency. Blend until smooth.
5. Mint and toasted coconut chips make a delightful garnish if you’re feeling fancy!
